It’s the most glorious Fall day here in the Hudson Valley, blue skies, a gentle breeze and leaves just beginning to turn golden. Naturally one’s thoughts turn to pumpkins! This Pumpkin Chai Tea Latte is a deliciously comforting tea, very slightly sweet and lightly spiced, it’s like being wrapped up in a cozy blanket.
I made this with Oat milk which I find is the best non dairy milk for “frothing” plus it’s gorgeously “creamy”. I used a good quality Chai tea (Buddha Tea) then added some cinnamon, a dash of maple syrup, pumpkin puree and vanilla extract.
I added all the ingredients to a saucepan and warmed them up together, once the tea had steeped for a few minutes I whisked it up with a hand whisk, you could blitz it in a blender if you prefer. If you like a creamy topping (I honestly preferred it without) try the non dairy brand So Delicious.
Always use a good quality pumpkin puree, make sure it’s just plain pumpkin and not the pie filling, it’s best to add your own spices and flavors.

Ingredients
8 oz non dairy milk (I used Oat milk)
2 tablespoons pumpkin puree
1 tablespoon maple syrup
1 Chai Tea tea bag
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
So Delicious non dairy Coco whip for topping (optional)
Instructions
Place all the ingredients except the So Delicious Coco Whip in a saucepan.
Bring to a boil then turn down the heat and allow to simmer for a minute.
Remove from the heat. Allow to sit for a further two minutes. Remove the tea bag.
Whisk the drink until frothy or pour into a blender and blitz. Pour into a mug or glass and savor.
