Puffed Quinoa Bars

Puffed Quinoa Bars-

A deliciously healthy protein-packed sweet treat!



1 1/2 cups puffed quinoa

1 cup cashew butter

1/3 cup date syrup or maple syrup

1 teaspoon vanilla extract

1/3 cup dried cherries

1/4 cup pistachios, roughly chopped

1/4 cup sunflower seeds

1 tablespoon hemp seeds

1 teaspoon cinnamon

1 cup dark chocolate, roughly chopped


  1. Line an 8 x 8-inch pan with parchment paper
  2. Combine the quinoa, dried cherries, pistachios, sunflower seeds, hemp seeds, and cinnamon in a large bowl.
  3. In a medium bowl stir together the cashew butter, date syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry and stir to combine.
  5. Dump the mixture into the lined pan and press down to spread.
  6. Melt the chocolate in a bowl in the microwave. Heat for 10-second bursts, stir well and don’t let it burn.
  7. Spread the chocolate over the quinoa mixture.
  8. Place in the fridge or freezer and allow to chill for at least 1 hour.
