This divine Luscious Plant-Based Chocolate Pudding is deliciously rich, smooth, and flavorful. Yes, it is entirely possible to whip up a fabulous-tasting vegan chocolate pudding from scratch with very little effort that tastes amazing! Being so ridiculously easy to make, you can dress it up for a fancy Holiday dessert or have it as a treat for an everyday kitchen supper!

How do you make Luscious Plant-Based Chocolate Pudding?

  1. Heat the plant milk and chocolate in a pan along with the date syrup and alcohol if using. Bring to a simmer.
  2. Mix the cornstarch with a tablespoon or two of the chocolatey milk until you have a paste.
  3. Pour it back into the pan, simmer and stir until thickened
  4. If the pudding has lumps – pass it through a strainer to achieve a silky smooth texture!
  5. Add the dark chocolate and vanilla, stir until the chocolate has melted, pour into a dish or pretty individual pots
  6. Chill in the fridge and then devour

What about the flavorings?

There are all sorts of lovely options. To make it a little more of a special occasion dessert you could add a tablespoon of the following in step 1 when you heat the milk and cocoa:

  • Grand-Marnier
  • Brandy
  • Rum

For non-alcoholic flavorings try:

  • a pinch of ground cinnamon
  • orange zest
  • instant coffee granules
  • a pinch of ground cardamon

Ingredients

2 cups non-dairy milk

1/3 cup dark cocoa powder

1/3 cup date syrup

2 tablespoons cornstarch

1/2 cup good quality dark chocolate (chopped)

1 1/2 teaspoons brewed coffee or instant coffee granules

1 teaspoon vanilla


Instructions

  1. In a saucepan combine the non-dairy milk, dark chocolate powder, and date syrup.
  2. Heat, whisk until simmering.
  3. Place the cornstarch in a small bowl, add 2 – 3 tablespoons of the chocolatey milk mixture, stir well until there are no lumps. Pour into the pan.
  4. Stir well and bring back to a simmer. Cook for a minute or two and allow the mixture to thicken. Remove from the heat.
  5. Pour in the dark chocolate and stir until melted.
  6. Add the coffee and vanilla and stir to combine.
  7. If your pudding is lumpy strain it through a strainer.
  8. Pour into one large or small individual bowls and place in the fridge to chill.
  9. The pudding will firm up as it chills.
