A fabulous Vegan Green Goddess Dressing dressing is a wonderful addition to your culinary repertoire and let me tell you this is one fabulous dressing. It’s positively bursting with flavor and zingy happiness. How could it not be, just listen to the ingredients:

  • avocado,
  • garlic,
  • Dijon mustard,
  • lots of fresh herbs,
  • maple syrup,
  • kosher salt and freshly ground black pepper,
  • lemon juice,
  • white wine vinegar

You can absolutely make this your own by using your favorite herbs but please make sure they’re fresh. If you pick them from the garden still warm from the sun you can pretty much taste their oils in the dressing which is fantastic and deeply flavorful. I have an explosion of mint, basil and oregano in my garden so I used those but honestly go with what you love. You can’t go wrong with fresh herbs – except perhaps for rosemary which might be a little overpowering. There’s plenty of “good” fat in this recipe from the avocado.

Easy Vegan Green Goddess Dressing

A deliciously green vegan dressing.

Ingredients

Scale

1 cup fresh herbs loosely packed. I used basil, mint and oregano

1 tablespoon Dijon mustard

1 tablespoon maple syrup

1/21 teaspoon freshly ground black pepper

1/2 a good sized avocado

Juice and zest of a good sized lemon, if the lemon is small you may need 2

1 tablespoon rice wine vinegar

1/4 cup filtered water

Instructions

  1. Place all the ingredients in a high speed blender and blitz. Taste and add more pepper, lemon juice if required. If the consistency is to thick add a little more water. Taste again and tinker until you’re satisfied.
