Chia Pudding with Berries

A deliciously healthy breakfast

Ingredients

Scale

3 1/2 tablespoons chia seeds

2 cups non-dairy milk (I used oat)

2 cups fresh or frozen berries of your choice

1 teaspoon vanilla extract

12 tablespoons date syrup OR maple syrup

Toppings

non-dairy yogurt

your favorite berries

your favorite nuts

pumpkin/sunflower seeds

granola

Instructions

  1. Place all the ingredients (start with 1 tablespoon of date or maple syrup – you can add more if necessary) in a powerful blender and blitz until smooth.
  2. Pour into individual serving bowls.
  3. Chill in the fridge for at least 1 hour – overnight is ideal.
  4. Top with non-dairy yogurt if desired, more berries, nuts, seeds, and/or granola
