This my friends is a deliciously healthy option for breakfast, dessert, or a luscious snack.  Chia Pudding with Berries is a beautifully “creamy” treat, try it topped with a little non-dairy yogurt, a few of your favorite nuts, seeds, and some granola for a very special breakfast.  Not only is this packed with nutrients, but it also offers a nice change from the everyday oatmeal breakfast options.  These little seeds are one of nature’s superfoods and this pudding is a perfect way to serve them. What’s so great about Chia Seeds?

Oh my goodness these tiny little seeds pack a tremendous nutritional punch! They’re bursting with:

  • omega 3 essential fatty acids
  • fiber
  • protein
  • calcium
  • phosphorus
  • zinc

According to the Harvard School of Public Health  “Two tablespoons of chia seeds (1 ounce or 28 grams) contain about 140 calories, 4 grams of protein, 11 grams of fiber, 7 grams of unsaturated fat, 18% RDA for calcium, and trace minerals including zinc and copper. They are the richest plant source of omega-3 fatty acids. Chia seeds are a complete protein, containing all nine essential amino acids that cannot be made by the body.”

Pure goodness!

  1. chia seeds
  2. plant milk
  3. your favorite berries, fresh or frozen
  4. vanilla extract
  5. date or maple syrup

How do I make this Chia Pudding with Berries?

  • To blend or not to blend! It’s your choice. I like my chia pudding smooth and creamy. To achieve this I add the seeds to the blender with the rest of the ingredients. If you prefer the “traditional” look of the whole seed, simply stir the seeds into the pudding after you’ve blended the rest of the ingredients and proceed with the recipe. Easy.
  • You can use fresh or frozen berries. Frozen is way cheaper and in my opinion just as, if not more delicious.
  • As far as toppings go you can pile them on with great enthusiasm or leave them out entirely.

3 days in the fridge is good. I doubt it will be given the chance to last any longer.

Ingredients

Scale

3 1/2 tablespoons chia seeds

2 cups non-dairy milk (I used oat)

2 cups fresh or frozen berries of your choice

1 teaspoon vanilla extract

12 tablespoons date syrup OR maple syrup

Toppings

non-dairy yogurt

your favorite berries

your favorite nuts

pumpkin/sunflower seeds

granola

Instructions

  1. Place all the ingredients (start with 1 tablespoon of date or maple syrup – you can add more if necessary) in a powerful blender and blitz until smooth.
  2. Pour into individual serving bowls.
  3. Chill in the fridge for at least 1 hour – overnight is ideal.
  4. Top with non-dairy yogurt if desired, more berries, nuts, seeds, and/or granola
