Oh my goodness it feels like Autumn !! 🍂 which means - Butternut Squash Soup 🧡 So easy, so velvety and SO delicious 😋
Sauté an onion, a leek, a few sprigs of sage and rosemary, and a couple of garlic cloves.
Sprinkle over some cumin, salt if using and pepper.
Add a peeled chopped up butternut squash, can of cannellini beans and about 4 cups of broth.
Bring to the boil, turn down to a simmer and cook until tender.
Remove the sage and rosemary, then blitz in the blender until smooth.
Serve with sage leaves and pumpkin seeds as desired.
